Have you ever wondered why there are holes in Swiss cheese? In the final analysis of things, it is doubtful this will go down as one of mankind's most intense curiosities, but there are some of us who are given to searching out such things. The cheese, referred to by the Swiss by its proper name, Emmentaler, is ripened by three different kinds of bacteria. One of them eats small holes in the cheese. When the product begins to rise, in the same manner as bread, the holes become considerably larger.
