When nineteenth-century missionaries began to penetrate into the interior of China, they
found a subsistent community that was living mainly off potatoes. Although all the
conditions seemed to be right for growing a fine crop, the missionaries found that the
farmers of this village could only grow tiny potatoes about the size of marbles. The
village was near starvation.
"Do you ever grow any larger ones?" the missionaries asked.
"Yes, we get a few good ones now and then."
"Well, what do you do with them?"
