A woman who operates an exclusive restaurant tells how she trained her wait staff. She told them that every customer was to be served as though they were a restaurant food critic for the local newspaper. Few people hold the power to make or break a restaurant the same way a critic does. They arrive unannounced and, unless recognized, enjoy a typical meal of their selection. The critic's appraisal of the establishment's food and service then appears in an open article. Potential customers are encouraged to patronize or avoid based on the educated opinion of the mystery patron.
